Ingredients:

1 box cake mix, any kind
1-2 Cups of Diet Rite Soda, or any soda & flavor

Mix both ingredients together and bake as box recommends. (Do not add eggs and oil, you don't need them).

Glad you liked it!! For a great fat-free salad dressing just take 2 TBLS T. Marzetti fat-free Ranch veggie dip and 1 TBLS Sugar free pickle relish (should be fat free on info label). Stir together and spoon on salad. Great taste without fat and is low sugar. Let me know if you try this. =)

Thanks for the Salad Dressing recipe! That will fit just fine into my diabetic diet. I am sure that the carb value is probably very low in the ingredients you mentioned, which makes it perfect for anyone who needs to watch the carb/sugar intake closely. [Wink]

I would try the cake, but the sugar/carb totals per serving are probably really up there, from the cake mix. =(

Actually azspirit, the only carbs & sugar is from the cake mix itself. Your only putting Diet soda inside which has nothing but carbonate added. The oil and eggs are deleted. Oh, by the way, the relish I mentioned in the other post is Sugar Free and soooo good.... :banana:

Carbs and sugar are usually quite high in a regular cake mix. It's the mix itself that I would have to investigate, and figure out how things calculate for the mix itself. I am not worried about the diet soda. =) I drink it all the time! Each Carb choice in my diabetic diet is 15 grams of carbohydrates, and that constitutes a "choice". I am allowed 4 choices per meal, plus two "1 choice" snacks during the day. So, that limits my carbohydrates to a maximum of 240 grams per day, or 14 "choices".

But, I may try this with a low-carb or sugar-free cake, and see if that gets closer to something that I could eat. I love the idea, and it sounds GREAT!! =)

It's good and I hope you get it to work for you...when my dietician told me about this, I thought she was loony and the cake would taste yucky. Boy was I wrong. [Big Grin]
